Food: Healthy Avocado Toast Recipe

 

Eating healthy usually correlates with having no time to prepare a meal, the cost or both. This is why I wanted to share this super easy and super healthy meal I prepared for myself with just a handful of ingredients I had lying around my kitchen.

There are so many ways to dress up toast, and I think avocado is toast wearing its Sunday best. My favorite part is, it’s so fast to make after the eggs are boiled that you’ll be chowing down in no time.

What you’ll need:

  • 2 pieces of 100% Wheat Bread
  • 1 Avocado
  • 2 Hard boiled eggs
  • 2 leafs of lettuce or kale
  • Cayenne Pepper
  • Sea salt
  • 1 Teaspoon of Olive oil

Directions:

Toast bread to a medium brown, then add the lettuce directly onto it, you may cut it up into smaller pieces if you don’t like to eat the stem.

 

 

Cut the avocado in half, remove the pit and with a knife, gently slice into the skin. Scoop out the pieces with a spoon and slide them out.

Place one half of the avocado on each slice of toast however you’d like generously spreading it over the surface of the toast, then add the sliced egg directly on top.

To finish it off, add a dash of cayenne pepper or as much as you want, just remember, it can get very spicy, so whatever you can handle.

Add just a dash of olive oil and top with a sprinkling of sea salt and enjoy!
